Ok so lets be honest…its freezing everywhere…..Saudi is cold, England is Cold, New York is cold etc etc….The last thing you want to rustle up for dinner is a healthy cold salad….
So to my Spicy Chicken & Bean Stew:
Ingredients (Serves 4)
4 Chicken Breasts – skinned and chopped into small pieces
1 red onion – diced
2 garlic cloves – crushed
1 red chilli pepper – de-seeded and finely chopped
1 can of tinned tomatoes
1 can of kidney beans
1 can of chick peas
1/2 pint – 1 point of vegetable stock (using low sodium stock cube)
1 handful of coriander
4 tablespoons of sour cream
1/2 tbsp. olive oil
In a large pan, heat olive oil & add onions. Saute until soft then add the chicken until all meat is white. Add chilli, garlic and pepper and saute for 5 mins. Add kidney beans, chick peas & tinned tomatoes then half the water. Stir well and bring to the boil. Add more water if desired and simmer on a low heat for 20 minutes. If you want this thicker add some tomato puree.
My kids loved this – especially as they had crusty buttered bread to dunk in it.
