Tortilla Chips & Spicy Sauce
I have picked elements of 2 different recipes here to make a delicious less-guilty treat – perfect for Movie Nights (If you live in my house you would know all about how strict a regime my 7 year old has about these nights…that’s another story…
The sauce is a great accompaniment to meat cooked on the BBQ as well 🙂
For The Chips
2 Whole wheat Tortilla Breads cut into triangles (approx. 2-3 inches long)
Olive oil – enough to cover the base a small frying pan
Heat the oil and add the tortilla chips – shallow fry on high until crispy making sure you turn to cook both sides
Place in a bowl in top of kitchen paper to absorb the oil then add salt.
For the Spicy Sauce
10 cherry tomatoes – halved
2 garlic cloves – sliced
1 tsp fish sauce
Juice of 1 lime
1 tsp chilli flakes
2 tsp Olive oil
Heat the oil in a small pan then add the garlic and cherry tomatoes. Simmer for 5-10 minutes.
Put mixture in a blender (including the oil from pan), and add fish sauce, lime juice & chilli flakes then blend.
Pour mixture into a bowl and serve with your tortilla chips
